Hands on Indian Cookery Day

Anita Sharma-James of The Spice Trade has given scores of people the confidence to cook Indian food sharing her culinary heritage and culture. During this day course she will be inspiring you to understand Indian cuisine, blend spices and even cook fresh chapattis and her award-winning Pakoras. Places are limited.

Programme

11 am Welcome/Introduction and brief overview of Indian Cuisine/how to blend spices.

11.15 am Cook and Eat : Session 1

Tamarind chicken and bell pepper curry

(succulent chicken breast marinaded in tangy tamarind curry cooked with peppers, tomato, ginger, garlic and masala)

Pakoras served with mint, apple and onion relish

(award-winning recipe that reached the finals of Jean-Christophe Novelli’s Masterspud competition and was featured on the TV in the summer)

1.00 pm Lunch

2.00 pm Cook Session 2

Raita Dip

(a creamy smooth Indian dip which is fabulous with breads and as an accompaniment to starters)

Spicy lentil dhal

(warming thick spicy lentil soup a great Indian favourite)

Fresh chapattis (unleavened Indian wheat flatbread cooked on an iron griddle or tawa)

3.45- 4pm Exchange of views on food and techniques,
